Mixed Vegetable Filling
makes about 11/2 cups, enough for 32 pyramid dumplings or 65 tortellini or wonton dumplings
NOTE: Cabbage,
carrots, and mushrooms make a colorful and almost fatfree dumpling
filling. Because of its high water content, cabbage must be salted
and pressed before being used in a dumpling
filling.
1/2 medium napa cabbage, finely shredded (about 6 cups)
1 tablespoon salt
3/4 cup grated carrot (about 1 large carrot)
8 dried shiitake mushrooms, rehydrated in 1 cup hot water until softened, strained (liquid reserved for another use), and chopped fine
1 recipe Flavoring Mixture for Dumplings,
INSTRUCTIONS:
Toss cabbage and salt together in colander; let stand until cabbage wilts, 15 to 20 minutes. Rinse cabbage; squeeze dry. Mix cabbage with remaining ingredients. Refrigerate until ready to make dumplings.
