Basic Spice Rub for Chicken
NOTE: Use this
rub (or the variation) prior to grilling. Makes about 1/2 cup, enough to
coat a single recipe of either dark or white meat
parts.
2 tablespoons ground cumin
2 tablespoons curry powder
2 tablespoons chili powder
1 tablespoon ground allspice
1 tablespoon ground black pepper
1 teaspoon ground cinnamon
INSTRUCTIONS:
Combine all ingredients in small bowl. Rub mixture over brined and dried chicken parts before grilling.
VARIATION:
Garam Masala Spice Rub
Toast following ingredients in dry skillet until fragrant, about 2 minutes, and then grind to powder in spice grinder: 2 tablespoons each fennel seeds, anise seeds, cardamom pods, and black peppercorns; 1 teaspoon whole cloves; and 1 cinnamon stick, broken into several pieces.
