Spicy Tomato Sauce
NOTE: This
sauce is fairly fiery. Adjust the amount of chili paste for a
milder or more incendiary sauce.
3 tablespoons tomato paste
2 tablespoons soy sauce
2 tablespoons chicken stock
2 tablespoons dry sherry
2 teaspoons chili paste
1/2 teaspoon Asian sesame oil
1/2 teaspoon toasted and ground Szechwan peppercorns
1/2 teaspoon sugar
1/2 teaspoon dried hot red pepper flakes
INSTRUCTIONS:
1. Combine all ingredients except pepper flakes in small bowl and set aside.
2. Add pepper flakes to stir-fry along with scallions, garlic, and ginger.
