Spice Rubs for Poultry
NOTE: These rubs are not as potent or peppery as the dry rub for
barbecue, making them well suited to mild poultry. Each recipe
makes about 1/2 cup, enough for one turkey. Recipes should be
halved for use on one chicken or two Cornish
hens.
Aromatic Rub
11/2 tablespoons ground cardamom
11/2 tablespoons ground ginger
11/2 tablespoons ground black pepper
1 tablespoon ground turmeric
1 tablespoon ground cumin
1 tablespoon ground coriander
11/2 teaspoons ground allspice
1/2 teaspoon ground cloves
Indian Spice Rub
3 tablespoons curry powder
3 tablespoons chili powder
11/2 tablespoons ground allspice
11/2 teaspoons ground cinnamon
INSTRUCTIONS:
Mix ingredients in small bowl. (Can be stored in airtight container for several weeks.)
