lactic acid in the buttermilk makes a rich cake with a slightly
coarser crumb. It also highlights the butter flavor. The maple
frosting is reminiscent of old farm cakes from New
England.

INSTRUCTIONS:
1. Follow master recipe for Basic Yellow Cake, sifting 1/4 teaspoon baking soda with other dry ingredients and replacing milk with 1 cup buttermilk at room temperature.
2. When layers are cool, frost cake.
