Spicy Nectarine Salsa
enough for 4 servings
2 medium nectarines, ripe but not mushy, cut into 1/4-inch dice
1/4 small red onion, minced (about 1 tablespoon)
1/2 medium jalapeno chile, stemmed, seeded, and minced (about 1 tablespoon)
2 teaspoons minced crystallized ginger
1 tablespoon golden raisins
1 tablespoon lime juice
2 tablespoons pineapple juice
Salt
In a small bowl, combine all salsa ingredients, including salt to taste, until well blended. Allow to stand for 5 minutes to let flavors develop. Follow Master Recipe for Sautéed Shrimp or Scallops. Spoon salsa over shrimp or scallops and serve immediately.
