Szechwan Chile Sauce
NOTE: This
sauce gets its heat from chili paste. Szechwan peppercorns add an
aromatic, herbaceous flavor.
3 tablespoons dry sherry
1 tablespoon soy sauce
1 tablespoon Asian sesame oil
2 tablespoons chili paste
1/4 teaspoon toasted and ground Szechwan peppercorns
1/4 teaspoon sugar
INSTRUCTIONS: Combine
ingredients in small bowl and set aside.
