Spicy Peanut Dipping Sauce
makes about 3/4 cup
NOTE: Serve
this thick sauce with grilled chicken, grilled shrimp, or Thai
spring rolls. You can also thin this sauce with stock or cooking
water and then toss with Chinese egg noodles. Soy sauce is
traditional in Chinese versions of this sauce; fish sauce is
characteristic of Thai cooking.
5 tablespoons creamy peanut butter
1/4 cup unsweetened coconut milk
2 tablespoons lime juice
1 tablespoon honey
2 teaspoons soy sauce or fish sauce
1 tablespoon minced fresh gingerroot
2 medium garlic cloves, minced
1/2 teaspoon red pepper flakes
INSTRUCTIONS:
Place all ingredients in blender or food processor and process until smooth. (Sauce can be refrigerated in airtight container for several days.)
