Slide the pizzas back onto the grill. Cover and grill them until
the pizza bottoms are crisp and browned, 2 to 3 minutes. If you are
working with a lot of pizzas, it may be easier to top one, slide it
back on the grill, and then cover it with a disposable aluminum pie
pan while brushing and topping the next pizza. This method also
comes in handy when grilling over an open
fire.
