Finely ground nuts are steeped in almost-simmering milk and cream
for 30 minutes to release their flavor. Pour the nuts and
milk-cream mixture through a fine-mesh strainer and then use the
back of a large spoon or wooden spatula to press on the nuts to
extract every bit of liquid and flavor from them. Discard the nuts
and then use the flavored milk-cream mixture to make a
custard.
