Ginger Ice Cream
NOTE: Ground
ginger adds a potent punch to this Asian-inspired ice cream. If
desired, fold in one-quarter cup minced crystallized ginger just
before the churning is completed.
11/2 cups whole milk
11/2 cups heavy cream
2 teaspoons ground ginger
3/4 cup sugar
4 large egg yolks
1/2 teaspoon vanilla extract
INSTRUCTIONS:
Follow Master Recipe instructions for Vanilla Ice Cream, stirring ginger into 1/2 cup sugar (see figure 21) and then adding mixture to milk and cream in step 1.
