TWO SQUARE CAKE TIERS sandwiching one tall round tier creates a windmill-like tower. The top tiers are covered in blue-green fondant for a matte look, and the white fondant base is decorated with pink fondant strips. Carefully apply the strips one at a time, affixing them to the cake with a mixture of equal parts water and corn syrup. Paper pinwheels finish the windmill effect. Glue them to straws or skewers. They make a simple decoration on a cake such as this, or they can also be used to decorate petite desserts such as cupcakes or even a pie! I doubled up two different sizes, gluing them together, to create more of a flower look.

TO MAKE THE PINWHEELS: Start with a paper square in any textile or pattern. If the pattern is only on one side, it will only show on part of the pinwheel. So before cutting and gluing the paper, make sure the side you want to show predominantly is facedown. Cut inward from each corner (on the diagonal), making sure to not cut all the way to the center. Bend one side of each corner toward the center to create a windmill shape and use a hot glue gun to secure the tips tightly at the center.
