Removing a Cake from the Pan
Since vegan, gluten-free cakes are particularly fragile, I find it helpful to keep each cake layer on a separate board while working with them. This ensures that the structure of the cake stays stable for stacking and tiering.
TOOLS:
- 2 cardboard cake rounds per cake pan, equivalent to or slightly larger than the size of the cake pans

Place a cardboard cake board on top
of the cake pan and carefully turn the pan over.

Gently tap the pan against the work
surface until the cake comes loose, then remove the pan.

Remove the parchment paper from the
bottom of the cake.

Place the second cake board over the
bottom of the cake.

Flip the cake over so that it’s
right side up and remove the top board.
