This tile-covered creation came from my passion for the sea: The green and blue water that swirls with white waves always amazes me. In this cake, the sea foam hues and sandcastle feel of the tiles and flags allude to a subtle ocean theme.

To create a marbled effect in fondant, twist together coils of fondant in multiple hues and white, then knead lightly. Roll out as usual. Marbled fondant (or sugar paste) can only be used once before losing its effect.
The sugar paste tiles are created using the same marbling technique as the fondant, in shades of light blue and green. Roll the sugar paste to a thickness of ⅛ inch and cut into small squares. Allow the squares to dry for at least 48 hours so they won’t lose their shape when handled. Attach the squares to the cake using royal icing.
